Beefsteak tomatoes are big, bright red, meaty, juicy and delicious. They have a unique kidney shaped fruit, which identifies the tomatoes as Beefsteaks. They are one of the favorite tomato varieties for the home gardener. An old time favorite, the Beefsteak Tomato is perfect for just about any dish, but it is particularly famous for being served raw in salads or sandwiches. They have been called the perfect slicing tomato as they retain their shape well after slicing. Beefsteaks are great producers with tomatoes reaching up to 2 lbs. These tomatoes are surprisingly lower in acid that most of the red varieties, which is an added benefit for people with acid issues. Plant these tomatoes in a sunny location 24-30 inches apart. They require a normal well-draining soil with 1-2 inches of water per week. When planting these and all other tomatoes, plant to a soil depth just beneath the first set of leaves. That first set of leaves (called cotyledon-which means the embryonic first leaves) will eventually fall off. Roots will form along the buried stem, establishing a stronger root, thus a stronger plant. Don't water too late in the evening. You want the plants to dry thoroughly before night. Too many problems with fungus start when you continuously water tomatoes late in the evening. The plants will grow up to 5 feet tall with heavy loads of tomatoes so staking or caging is required. Expect harvest 85 days from seeding, with plants producing up to the frost
