Garlic's medicinal benefits are derived from the sulfuric acid alliin. When activated by the enzyme allinase, the sulfuric acid alliin converts to allicin. It's recommended that raw garlic or garlic supplements be used instead of cooked garlic because heat inactivates the enzyme allinase that converts the sulfuric acid alliin to allicin.
