Traditional Japanese noodles made from a blend of hard winter and spring wheat, whole buckwheat flour and a bit of sea salt. Crafted using ancient traditional methods and cut in the classic square soba shape. Thinner than udon but much more hearty. Excellent warming winter fare, and always satisfying in any season served hot or chilled. Low fat and a good source of protein and dietary fiber.
