Part of the Classic Series by Joyce Chen, the 12" Flat Bottom Stir Fry Pan is a solid workhorse of a pan with 1.5mm gauge carbon steel body. The natural carbon steel surface duplicates a more authentic wok cooking surface. Seasoning is required. It's made for use on gas or electric burners and the pan's quality weight carbon steel body is designed for rapid, even heating and cooling that is a must for any stir-fry.
