RECIPE: Tomato Raita Prep time: 15 minutes Cook time: 2 minutes Serving size: 4 Heat level: Mild 1 cucumber diced without skin 1 tomato diced 1 ½ cups yogurt ½ tsp. salt 1 tsp. Rani Yellow Mustard Seeds 1 tsp. Rani Cumin Seeds 1 tbsp. Vegetable oil Handful of chopped cilantro Sprinkle of Rani Paprika Mix together cucumber, tomatoes, yogurt and salt. Heat oil add mustard seeds and cumin. Once they finish popping, (approx. 1 minute) add yogurt. Stir well and serve chilled. Garnish with paprika and cilantro.
