Red Noodle Bean-(Vigna unguiculata)-This bean is also called the Asparagus bean or Yard Long Bean. It is common in Southern China. The beans can grow to a length of 22 inches or more. But are best when harvested at about 12 inches. They are tender, stringless and sweet. Cut into small sections they make a welcome addition to any stir-fry dish. They are also good in soups, steamed and in stews. The red color fades when cooked. Tasty enough to get your kids to eat their veggies! The plants are very heat tolerant and grows very fast. To get good production they need to be trellised or staked. 80 days to maturity.
