Galeux d'Eysines squash are perfect for Halloween: a little weird, maybe just a little strange-looking too! Also known as "peanut pumpkins," because the spots on them resemble peanut shells, 'Galeux d'Eysines' undergoes an almost magical transformation in the garden! The fruits form, usually a maximum of four to a vine, and look like any ordinary winter squash. They are round, and green, and completely unremarkable! But then, something happens. In late summer, the green squashes start to take on the palest pink blush, and, before long, you have a squash that looks like it would be completely at home in Barbie's Dream House. But only if you disregard all of the peanuts now covering the surface. The peanuts/warts are caused by the build-up of sugars in the skin of 'Galeux d'Eysines.' Each squash is different, and the number of peanuts, as well as the ultimate color of the squash, varies by when you harvest it. You can harvest as soon as it turns pink. 'Galeux d'Eysines' is a popular French market pumpkin due to its unique appearance, but even more so for its flavor! The texture is silky, but it holds up well in sautes or when roasting. The flavor is best described as somewhere between a pumpkin and a sweet potato. They are also very tasty in soups and stews! Notes: More bumps = greater sugar content.
