The cacao bean is about 50% healthy, stable fats, and when it is gently cold-pressed, expels delicious cacao oil. This process is carefully monitored to ensure that the cacao does not exceed 118 ºF, and when finished pressing, the oil is cooled to harden into what is known as cacao butter.
