Quercetin is a flavonoid (meaning that it gives a plant its color) that has antioxidant properties. It also acts as a foundation flavonoid for many other types of flavonoids in that plant family. Flavonoids do not only give plants their color, but also give it to fruits and vegetables ad even flowers. They are responsible for all of the coloration of the plant that is not green (since the green in a plant is caused by an excess of chlorophyll. These flavonoids all have antioxidant properties which protect healthy cells from free radical damage. Quercetin may even add to the amount of vitamin C in the body as well, another antioxidant, thereby ensuring that one is protected from free radical molecules.
