The Global Knives 30th Anniversary 3 Piece Set includes the 8" Hollow Ground Cook's Knife (G-77); the 5" Cook's Knife (GS-89); and the 3.5" Paring Knife (GS-38). Global G and GS series blades are made from a proprietary CROMOVA 18 Molybdenum/vanadium stainless steel alloy. The knives are ice-tempered and hardened to Rockwell C56-58 degrees.
