Referred to as "a remarkably good stand-in for that unobtainable Aceto Balsamico Tradizionale." (Read review at link below.) This is one of our lesser known products, and one of our favorites. The process started over two years ago with several tons of organic, fermented dates from California that we turned into a beautiful date vinegar, pictured here. After allowing it to mature for a couple years, we draw it out batch by batch and add 6% organic balsamic of Modena to take it in that flavor profile.
