There are so many varieties of Basil, but the Sweet Basil Herb is the most well know and well used of the varieties, being the key ingredient in Pesto sauces. Although it most likely originated in India or Greece, Sweet Basil is the type most associated with Italian foods. In warmer climates Basil is a perennial but in most places it is a seasonal plant, but the plant is such a fast growing plant that you will be harvesting in no time. Sweet basil is best used in tomato dishes, soups, salads, sauces, pasta dishes, and seasoned oils and butters. For fullest flavor from your basil leaves, add in the last 10-15 minutes of cooking. Place plants 12-18 inches apart in a compost rich well-draining soil. Basil plants need 6-8 hours sunlight daily, but benefit from some afternoon shade. Pinching leaves frequently encourages more leaf growth and plant bushiness. As with all basil types pinch flower heads off before they open as the plant will no longer produce the fragrant leaves if it has flowered
