Yummmy raw honey is different from other brands that pasteurize (heated at 70 degrees or more, followed by rapid cooling) their honey to keep honey from crystallizing and makes it look cleaner and smoother for the grocery shelf. By heating the honey, it loses many of the enzymes and nutrients that are beneficial to your body. Characterised by fine textured crystals, raw honey sometimes looks cloudier and contains particles and flecks made of bee pollen, honeycomb bits, propolis, and even broken bee wing fragments. Crystallization may occur in cooler temperatures or after a few months after bottling, but you can return it to a liquid state by placing the bottle of honey inside a bowl of hot water.
