- Very High in Polyphenols – Rich in healthy Antioxidants, (450+ mg/kg Phenols during production) with high Hydroxytyrosol (and its derivatives) levels at over 6mg/20g. Attention! These numbers are the result of using the only certified chemical method by the International Olive Council called 'HPLC'. If we used other testing methods (not certified by the International Olive Council) the number result could be much higher.
