It is better than spinach, its relative, both for flavor and nutrition. Lamb's Quarters is also known as "white goosefoot", "pigweed", or "dirty dick." Lamb's Quarters is the European relative of spinach and beets, which grows throughout the North American continent and bears huge quantities of edible, spinach flavored leaves you can collect from mid-spring to late fall. This AMAZING plant is one of the highest sources of beta-carotene, calcium, potassium, and iron in the world. It is also a great source of trace minerals, B-complex vitamins, vitamin C, and fiber. The seeds are very high in protein, Vitamin A, Calcium, Phosphorus, and potassium, but they are very hard to collect! And be very careful if you plan to collect seeds. This plant drops thousands of seeds and the seeds can remain viable in the soil for 10 years or more producing plants every year! So if you don't want to be weeding this out of your garden every year then you should harvest the plant when it is still young. I only use the baby greens myself. The flavor is best when the plant is smaller than 1 foot. With a wholesale lot of seeds like this one you can sow the seeds in your garden all year so you can have wonderful baby greens all season long!
