Pimora is a... pimento-based briquette/ smoker made from compressed dried pimento leaves which, when placed in your grill alongside the charcoal or in your oven, adds pimento flavouring to your meats or vegetables. The smoking of the briquettes/ smokers releases the natural pimento oils of the leaves - which are infused into the product being grilled. The tradition of barbecuing was first practiced in Jamaica by its first inhabitants, the Tainos. The Spanish settlers adopted the method, and perfected the cooking of barbecuing and jerk, combining the Taino tradition with that of their forefathers. Pimento (Allspice) is indigenous to Jamaica and has been infused into our cooking and food preparation. Very aromatic and of "curious gusto" the tree grows wild and it is said that only the female blossoms gives berries. The unripe berries are dried and have many uses - chiefly as a key ingredient in our jerk dishes. The real jerk flavor comes from the aroma of the Pimento leaves and the Pimento wood/stick that the meat is cooked on. This ancient tradition has led to the depletion of the Pimento orchards; hence the Pimora Pimento Briquette was originated. The practice of cutting down the trees was eliminated by the process of harvesting the leaves from the Pimento trees and applying proper pruning methods to ensure sustainability.
