Named for its unique shape, Tri-Color Toasted Pearled Couscous (also known as Tri-Color Israeli Couscous or Tri-Color Pearled Pasta) is shaped and rolled into tiny balls and then toasted. This allows the product to absorb liquids and cook up more like a rice or risotto. The toasting process also gives this product a nutty flavor and satisfying mouth feel. Unlike risotto, you do not have to stand over the couscous adding simmering stock every few minutes. Simply sauté onions in garlic and olive oil, add the couscous and stir well to coat, and then add water or stock. Cook, allowing the couscous time to simmer and absorb the liquid, add vegetables, herbs and seasonings as desired. This tricolor toasted pearl couscous is simply sensational made with fresh basil and summer tomatoes; sprinkle some feta cheese on top and serve with grilled marinated lamb, chicken or beef. Our color will be bright and vibrant even after cooking it.
