We have seen it called "That old white magic" - we prefer to think of it as the "mother of all fats." Used for generations in Europe, Goose and Goose Fat was so prized that in France only the aristocracy had permission to eat geese. Goose Fat is milder than Duck Fat but carries a distinct flavor profile that will up the quality of any of your dishes. Like duck fat you can confit, saute, bake, roast, baste, pan fry, deep fry, stew, etc. Raised outdoors and free to roam these are happy geese and it shows in the flavor. It's time to get goosed!
