Considered a part of "The Holy Trinity" of Mexican Chili Peppers these are a dried version of poblano pepper. The outer flesh has a sweet and rich raisin like flavor that is often associated with the flavor of chili dishes. One of the most popular chiles used in Mexican cooking, Anchos are very wrinkly, dark, almost black in color, but after soaking, their color becomes dark mahogany. These are pretty large chiles (about 3 - 4 inches long and about 2 1/2 inches wide). Ancho chiles can be reconstituted by soaking them in warm water, or they can be ground up or crushed and added to a recipe.
