The outer skin is dark red in coloring, as is it's inner flesh. Mild and sweet, the roots can be sliced up and enjoyed raw, or in salads. The tops grow to a mature height of roughly 12 inches tall, producing vibrant, leafy greens, with dark red stems and veins.
