This is a complex oil with hints of artichoke, tomato vine and aromatic herbs. Its flavor is very complex, well balanced, sweet, bitter and pungent. OLIVE GROVE REGION: Priego de Cordoba, Andalusia, Spain. ALTITUDE: about 700 mts. above sea level. HARVESTING SYSTEM: Mechanical means. HARVEST TIME: Beginning of November. EXTRACTION SYSTEM: Cold extraction, only by mechanical means. COLOR: Luminous Green, very dense.
