Winter Purslane (Claytonia perfoliata) - Winter purslane, also called Miner's Lettuce, is a native of the west coast of north America and was used extensively as a salad green (and to prevent scurvy as it is rich in Vitamin C) in the days of the "gold rushes" from California to Alaska; hence, that is how it gets is second common name of Miner's Lettuce. Winter purslane is the hardiest of the winter salad greens. It has a neutral, fresh flavor with succulent leaves. Broad leaves encircle the stems that bear small white flowers in clusters. Winter purslane herb plants grow freely and all year round in cool, shady positions or shaded greenhouses. Winter purslane is one of the few useful plants that can grow in full shade (in fact it prefers this), though it will not object even to full sun. It likes well-drained soil, nutritionally poor, moist soil for preference. Although it prefers full shade, it will grow in full sun as well; however, it may turn red if the temperature is high over a long period.
