Anchovy fillets are integral to many Mediterranean dishes, whether served whole with salad or antipasti, or finely diced, to be used as a seasoning. They add the "fifth" taste - umami (savory, meaty) - to a dish, and do so better than MSG, a common source of umami. Agostino Recca anchovies, from Sicily, are packed in pure olive oil with a kick of hot pepper to retain maximum flavor and texture.
