Agar by 4mular, renowned for its pure ingredients and superb quality among professional chefs in the restaurant/foodservice industry. Also known as kanten, agar is derived from a bright red sea vegetable with the botanical name of Gleidium purpurascens. An excellent gelling agent and thickener in many processed foods, agar has recently attracted Avant grade chefs due to its flexibility with heat. Will form gels at 88° F and does not melt below 136° F.
