The word "Biber" means pepper. Similar to the raisin like flavor of Aleppo but has more of a chocolate earthy tone. It has a heat that builds as you eat more. Peppers are large and can get almost the width of a small cup and over 8 inches long. The Urfa Biber kind of resembles an elongated bell pepper. In the Mideast the Urfa Biber is used to season meat dishes especially Lamb Kabobs. But is also delicious stuffed or roasted. Another use is to add a different flavor dimension and some heat to desserts like ice cream or cakes. The Urfa Biber chile plants ripen from green to a maroon red color and can grow up to 3 feet tall.
