A rich, deep red flowers of the Hopi Red Dye amaranth (Amaranthus cruentus) were traditionally used by the Hopi to make a scarlet dye for coloring their ceremonial Piki cornbread. The young leaves are delicious raw or steamed. The plants grow four to six feet in height and produce beautiful black seeds that are nutritious and easy to process for eating.
