Salami blend provides a traditional, robust almost buttery flavor Pepperoni blend imparts nice heat from the red pepper and achieves a bright, fresh pepperoni flavor. Soppressata blend combines heat from the red pepper with mace/nutmeg which blends the flavors together nicely.
