Coarse flakes are hot rod-flaked and partially gelatinized. Lends a dry, crisp character, oily texture and strong rye FL avor. Used at 10-20 percent of grist in many bourbons-style mash bills, or higher for rye whiskeys. At 5-10 percent of a brewery grist, flaked rye adds body and head retention with FL avor Notes of wintergreen and Spice.
