Known as Red Calaloo, Amaranth green oval to heart-shaped smooth leaves are overlaid with burgundy red. Large fleshy comparable to spinach in taste, the leaves are a good source of dietary fiber and contain high amounts of protein, vitamins, and minerals. Leaves and stems are best when harvested young for baby leaf and can be grown as micro-greens.
