Carob pods, harvested from a wild tree native to the Mediterranean, are lightly roasted to bring out their sweet, chocolate flavor. A member of the legume family, carob seeds are used to make locust bean gum, commonly found in ice cream. The dark brown pods contain 24 antioxidants, calcium and are fat free. Pinitol, a unique compound in carob pods, reduces insulin resistance and boosts energy. Carob's carbohydrates are bound in complex fiber for a low glycemic index that supports good digestion and regularity. Compared to chocolate, carob is stimulant free, has no added sugar or fat and thus is much lower in calories.
