Pasilla Bajio pepper plants will produce 7 inch long, green, almost black hot peppers. Mildly hot, ranging anywhere between 1,000 and 2,000 units on the Scoville scale. The plants will grow quickly from seeds, baring their peppers all through the summer months, up until the first frost. They aren't anywhere near the habanero when it comes to spicy flavor, however they are just right for those of you who are not fans of the heat. The plants themselves reach a mature height anywhere between 24 and 32 inches, taking up roughly 24 inches in width.
- Heat Level: Mild to medium heat ranging from 1,000–4,000 Scoville Heat Units (SHU), offering a gentle warmth similar to poblano peppers but with a more refined, less grassy profile than many mild chiles.
- Appearance & Size: Long, slender, wrinkled pods typically 6–10 inches in length and 1–1.5 inches wide, starting dark green and ripening to a deep, rich chocolate-brown or dark reddish-brown with thin walls and a slightly tapered, curved shape.
- Flavor Profile: Delivers a rich, complex taste—smoky, earthy, raisin-like sweetness with subtle notes of prune, licorice, and mild bitterness—providing depth and nuance that shines when dried and used in traditional Mexican sauces.
- Plant Characteristics: Tall, productive plants grow 3–5 feet high, require a long growing season and warm conditions for best results, and produce high yields of pods that are commonly harvested green for fresh use or allowed to ripen fully for drying into pasilla chiles.
