Ekte Gjetost is a sweet, brown, firm cheese, made solely from pure goat's milk which is boiled under pressure until caramelization occurs. Stronger than regular Gjetost, it is widely popular among Scandinavians. Children especially enjoy its sweet flavor and fudge-like texture.
